Meal Plan 2nd Half of December

Breakfasts


Everything Smoothie
(recipe packed with nutrition to start our day off)
Many months ago, our naturopath said one of the best things I could do for my child who was struggling with constipation was to get her hooked on nutritious smoothies because you can pack so much nutrition in it...it worked!
2 cups unsweetened coconut milk, 8 ounces Greek yogurt, 1 cup frozen berries, 2 frozen bananas, 1 chunk of fresh ginger, 3 tbsp. Anutra (chia seeds), 2 handfuls of spinach, 1-2 tbsp. protein powder


Egg salad and smoothie (3 breakfasts first week/ 3 breakfasts 2nd week)

Dinner


Super Energy Kale Soup with deer burgers (3 dinners)

For the burgers, I take 2 lbs of deer and mix it with garlic and onions and cheese and either cook on the grill or in my oven for 20-25 minutes flipping halfway through


Creamy Spinach and Sausage Pasta (3 dinners)

*I sub the sausage for chicken.


Crockpot Chicken with sweet potatoes and salad (3 dinners)
I place cut up onions on the bottom of my slow cooker and then place the chicken on top.  I douce the chicken in salt, pepper, basil, orgegano, etc. and cook on low 8-10 hours not removing lid till it is done so moisture stays in and makes in more moist. 
Cook potatoes in oven on 350 douced in coconut oil for 45 minutes or until done.


Shepherd's Pie (3 dinners)
(I always double or tripple be/ it is delicious, goes fast, and a lot of work- well worth it!)
coconut oil
1 onion...
3 carrots
2 ribs celery
mushrooms
garlic
1 tbsp salt
1 tsp oregano
3 tbsp tomato paste
1 lb ground turkey
1/4 cup stock or broth
1/2 ts Worcestershire sauce
pepper
4 cups from scratch mashed potatoes : (1 1/2 lbs russet potatoes peeled and quartered, tsp salt, 3/4 cup whole milk or alternative milk, 6 tbsp coconut oil, 2 tbsp fresh parsley, pepper.....put potatoes in a saucepan with cold water to cover by about an inch and add salt...bring to simmer over medium high heat, uncovered, until the potatoes are tender but not mushy, about 15 minutes. At the same time, combine the milk and coconut oil in a small saucepan and warm over low heat until the coconut oil is melted...remove from heat to keep warm by covering...drain potatoes and return to saucepan...toss over medium heat until dry and then add milk mixture and mash the potatoes until slightly chunky, then stir in parsley and season with salt and pepper to taste).
1/4 cup parmesan cheese or cheddar cheese (optional)

Directions:
heat coconut oil and veggies and sauté along with salt and oregano....once veggies soft, add tomato paste and cook for another 5-8 minutes, add turkey, broth, pepper, and Worcestershire sauce and cook until meat is done.... put in casserole dish and top with homemade mashed potatoes and cheese if using...can also dot with butter or coconut oil on top. Bake at 375 for about 40 minutes

Enchilada Casserole (3 dinners)
2 ½ lbs ground deer meat, 1 green pepper, 1 onion, 2 tbsp chili powder, 2 cans cream of mushroom soup and ½ soup can water, or make your own cream of mushroom sauce and with no added water, 1 can enchilada sauce, ¼ ts garlic powder, ¼ cup ripe olives, corn tortillas, 10 oz cheddar cheese or more depending on your love of cheese
Cook in skillet, add remaining ingredients, layer tortillas and cheese with mixture ending with meat mixture and then garnish with cheese…make 24 hours ahead
Cook at 350 for 45 minutes
